Endocrinologist Kenneth Blanchard, M.D., of Lower Newton Falls,
Massachusetts states, "The key thing is . . . doctors are always told
that TSH is the test that gives us a yes or no answer. And, in fact, I
think that's fundamentally wrong. The pituitary TSH is controlled not
just by how much T4 and T3 is in circulation, but T4 is getting
converted to T3 at the pituitary level. Excess T3 generated at the
pituitary level can falsely suppress TSH." The conclusion being;
many people who are simply tested for TSH levels and are found to be
within "normal" range are, in fact, suffering from thyroid problems that
are going undetected.
Many Americans suffer from hypothyroid symptoms such as cold hands and
feet, low body temperature, sensitivity to cold, a feeling of always
being chilled, headaches, insomnia, dry skin, puffy eyes, hair loss,
brittle nails, joint aches, constipation, mental dullness, fatigue,
frequent infections, hoarse voice, ringing in the ears, dizziness, loss
of libido, and weight gain, which is sometimes uncontrollable.
Researchers studied 25,862 participants at the Colorado statewide health
fair. They discovered that among patients not taking thyroid
medication, 8.9 percent were hypothyroid (under-active thyroid) and 1.1
percent were hyperthyroid (over-active thyroid). This indicates 9.9
percent of the population had a thyroid problem that had most likely
gone unrecognized. These figures suggest that nationally, there may be
as many as 13 million Americans with an undiagnosed thyroid problem.

You've heard that cooking
removes vitamins from a lot of foods, but did you know it could also effect the
minerals in the food?
Here's the reason you must

The European Journal of Cancer Prevention reports
that the Department of Biomedical Sciences, Modena University in Italy, decided
to make a dinner to see what would happen to the nutritional value of meat,
fish, vegetables and fruit.
None of the foods they cooked -- beef, filet of sole, cauliflower and vegetable
soup -- had any folic acid left after preparation. But the fish still had 94
percent of its original retinol levels, even after it was grilled.
Copper levels in cauliflower dropped 37 percent as a result of cooking, but
almost all the foods retained more than 90 percent of their iron content. That
means 10% disappeared.
And while orange juice retained its vitamin C levels, fruit salad lost its
vitamin C content very rapidly.

The
Prednisone Food!
Because of it's great qualities a book could be written here about these
delicacies, but I will try to hone it down to a rather large article on
the prednisone of foods!
Mushrooms, considered by many a delicacy yet should truly be the staunch
food in every diet... Why? Studies have been released over the last year
or so giving us the cancer preventing information on mushrooms of all
kinds bolstering the saying "Food is medicine!"
There are a myriad of mushrooms available on supermarket shelves but I
am going to focus on my favorite of the mushroom world; Reishi. These
exotic hearty mushrooms rich, smoky flavor have also endeared them to
American taste buds across the U.S.. If your local store does not carry
fresh reishi mushrooms, investigate the Asian food stores in your area
as they oftentimes carry these specialty mushrooms.
Let me say up front; because a few wild mushrooms are deadly and many
more are mildly poisonous, mushroom hunting is not a hobby for the
careless or uninformed. On the other hand, neither is it necessarily the
death-defying feat that many people imagine. There are a number of good
edible mushrooms that are easy to recognize and hard to confuse with
anything dangerously poisonous. (Poisonous mushrooms are often referred
to as "toadstools," but this is a folk name that has no precise meaning.
In this article, they will be called simply poisonous mushrooms.)
Like other mushrooms, these specialty mushrooms are as mysteriously
unique as they are delicious. While often thought of as a vegetable and
prepared like one, mushrooms are actually a fungus, a special type of
living organism that has no roots, leaves, flowers or seeds.
Reishi is the Japanese name for the Ganoderma family of mushrooms. In
Chinese, they are called "ling-zhi." Reishi is a large, dark, mushroom
with a glossy exterior. In traditional Chinese medicine, Reishi is in
the most highly rated herb category in terms of multiple benefits, used
as a medicinal herb, absent of side effects.
There are 6 different types of Reishi differentiated only by color: red,
purple, blue, yellow, black, white, recorded in Chinese pharmacopoeia
are actually one species grown under different conditions.
History;
Reischi is believed to have been known since at least the reign of "Fuxi",
a legendary ruler of that time known also as the first of the Three
August Ones.
Seng Nong, the Holy farmer, who was the second of the Three August Ones,
is said to have discovered the curative virtues of plants by tasting
hundreds of species. "Seng Nong's Herbal Classic" is considered to be
the earliest manuscript on Chinese materia medica and is still today the
foundation of Traditional Chinese Medicine and in general all Oriental
Medicine. Reishi also contains ergosterols, complete proteins,
unsaturated fatty acids, vitamins and minerals.
Reishi, known in China as an "elixir of immortality," has been used for
more than 3,000 years to rev up the immune system and heal chronic
inflammatory conditions. Dozens of preliminary studies support its
anti-inflammatory properties. One Chinese study found
that of the more than 2,000 people with chronic bronchitis who took
reishi syrup for two weeks, 60% to 90% said they felt better. (Reishi
syrup is a long drawn out process best left to the professionals.)
Li Shi Zhen, a famous medical scholar in the Ming Dynasty (1368-1644)
introduced the indications of the 6 species concretely. The work of the
latter was republished in 1956, and translated into several foreign
languages including Japanese, English, French, German, Russian and Latin
and is regarded as the cornerstone of Traditional Chinese medicine.
Today, an estimated 4,300 tons of reischi/ling-zhi is produced yearly in
the world, with China producing 3,000 tons followed by Korea, Taiwan,
Japan, Thailand, USA, Malaysia, Vietnam, Indonesia and Sri Lanka.
The Prednisone of foods!
Prednisone, the corticosteroid used to treat a variety of inflammatory
ailments -- arthritis, asthma, colitis and some cancers -- and to
prevent rejection of transplanted organs. Its nasty side effects - from
a swollen "moon face" to increased infections - are legendary. But what
many people don't know is that this medicinal reishi mushroom could, in
some cases, do as good a job without wreaking the prednisone havoc on
the body.
While prednisone has its place for short-term life-threatening
conditions, it may save your life. But if you have an ongoing
inflammatory condition, reishi may be the best first line of treatment.
Researchers at Shanghai Medical University, Shanghai Tumor Hospital, and
Shanghai Chung San Hospital have independently isolated from the Reishi
mushroom a few species of polysaccharides which have subsequently been
shown in clinical studies to have anti-tumor activities.
Reishi has also been shown to exert:
*A positive effects in treatment of insomnia
*Preventive effects against high altitude sickness
*Cholesterol -lowering effects
*Therapeutic effects in chronic hepatitis
Available in some grocery stores and health-food stores, in it's natural
form or in powder form, as well as capsules and tablets. All
observations show that Reishi has no side effects and can be consumed in
high dosages and in parallel with other medications. Its main properties
are the cleansing of blood, enhancement of the immune system and the
lessening of nervous tension. These properties are conducive to
normalizing and balancing the body and as a result preempt cure a
multitude of diseases from within.
Tips for Preparing Mushrooms:
Mushrooms are very porous, so if they are exposed to too much water they
will quickly absorb it and become soggy. Therefore, the best way to
clean mushrooms without sacrificing their texture and taste is to clean
them using minimal, if any, water. To do this, simply wipe them with a
slightly damp paper towel or kitchen cloth. You could also use a
mushroom brush, available at most kitchenware stores.
If the fresh mushrooms become dried out because of being stored for too
long, soak them in water for thirty minutes.
Our favorite way of eating is sautéed alone or with stir fry vegetables
and rice.
I simply clean, slice and sauté in butter flavored virgin olive oil.
For each two cups of sliced mushrooms use 1 Tablespoon of virgin olive
oil and to 1 teaspoon of butter (I do not use margarine for anything
because of its poisonous fat and chemicals). Heat olive oil ? not to
smoking stage - then add butter, melt and mix well. Add mushrooms and
sauté stirring until cooked (about 3 - 5 minutes). Add a dash of Bragg's
Liquid Aminos for added flavor just before removing from heat. Serve
with other stir fried vegetables over rice or alone over rice.

Like tuning up your car to increase its gas mileage, eating
more magnesium-rich foods improves your body's conversion of
food to energy.
According to studies by the U.S. Department of Agriculture,
women ages 55 to 70 were able to ride an exercise bike for equal
lengths of time regardless of whether they were getting enough
magnesium. But they burned 15 percent more oxygen while on a
magnesium-poor diet, and their heart rates averaged nine beats a
minute faster.
In other words, they got fewer miles to the metabolic gallon.
To get more magnesium, eat more greens (especially spinach,

Gulf of Mexico "Dead Zone" to Hit Record Size -

HOUSTON - The Gulf of Mexico's "dead zone" -- a swath of
algae-laden water with oxygen levels low enough to choke out
marine life -- will likely reach record size this year, and the
main culprits are rising ethanol use and massive Midwest
flooding, scientists said on Tuesday.
The dead zone, which reoccurs each year off the Texas and
Louisiana coasts, could stretch to more than 8,800 square miles
(22,790 sq km) this year -- about the size of New Jersey --
compared with 6,662 square miles (17,250 sq km) in 2006 and
nearly double the annual average since 1990 of 4,800 square
miles (12,430 sq km).
Scientists from the US National Oceanic and Atmospheric
Administration, Louisiana Universities Marine Consortium and
Louisiana State University said the algae that lowers oxygen
levels in the dead zone is being fed by farm use of fertilizers
like nitrogen and phosphorus.
For fishermen who look to the Gulf of Mexico for crabs, shrimp,
crawfish and other seafood, the growing dead zone means they
must venture farther out into the gulf's waters to find their
catch.
The record dead zone is due to soaring use of ethanol in US
motor gasoline supplies and by massive flooding in the Midwest
earlier this year, scientists said.
"We're planting an awful lot of corn and soybeans," said Eugene
Turner, a scientist at Louisiana State University. "It rinses
off easily when there is a rain."
One-third of this year's US corn crop, or 4 billion bushels,
will go to make the alternate fuel ethanol, the US government
has projected, compared to 3 billion bushels of the 2007 crop.
The dead zone starts in Midwestern corn country when farmers
fertilize their fields with nitrogen. The fertilizer run-off
flows down the Mississippi River into the Gulf of Mexico, making
algae bloom on the surface and cutting oxygen to creatures that
live on the bottom.
Substances in this runoff include the nutrients nitrogen and
phosphorus, which can stimulate the growth of algae. These algae
settle and decay in the bottom waters of the Gulf, and the
bacteria that decompose them gobble up oxygen faster than it can
be replenished from the surface, which means lower levels of
dissolved oxygen in the water.
US scientists estimate that a record 83,000 tons of phosphorus
seeped into the Gulf of Mexico from April through June, up to 85
percent above normal seasonal levels.
"Excess nutrients from the Mississippi River watershed during
the spring are the primary human-influenced factor behind the
expansion of the dead zone," said Rob Magnien, director of the
NOAA Center for Sponsored Coastal Ocean Research.
To reverse the pattern, US farmers must plant more perennial
crops that trap rainwater and keep it from running into the Gulf
of Mexico, Turner said.
And eventually, scientists need to invent new breeds of
perennial corn plants that can remain in the soil from one
planting season to the next, avoiding the need to strip fields
bare and leave them susceptible to flooding, he said. (Reporting
