Greetings and thank you for
being an optin subscriber!
Visitors gone and back to normal here. Lots of calls with health
questions this week and some of those concerns are covered in today's
different columns. Research has its rewards!
This week's "Food of the Week" is another harvesting veggie from dh
garden and one we so enjoy for several weeks and I freeze it for
later... All foods grown in his garden are organically grown
and creates lots of work for me but worth it when we have it in jars or
freezer to enjoy year round.
I'm so glad he loves that type of work, if
it was left up to me we would have very little as I have no time or
patience for growing the size garden he does!

FLAWED REPORT SO HUGE I COULD
DRIVE A SEMI TRUCK THROUGH IT!
The following has been reported all across the world
the last few weeks. News people have been given the report as honest and
straight forward yet the report alone points out the error of their
findings in the second paragraph by the so-called scientific reports
studied to reach their conclusion.
Read the following excerpt from their report [ in brackets ] and see if
you can find the flaw of their findings that I did?
[Researchers from the London School of Hygiene & Tropical Medicine said
consumers were paying higher prices for organic food because of its
perceived health benefits, creating a global organic market worth an
estimated $48 billion in 2007.
A systematic review of 162 scientific papers published in the scientific
literature over the last 50 years, however, found there was no
significant difference.
"A small number of differences in nutrient content were found to exist
between organically and conventionally produced foodstuffs, but these
are unlikely to be of any public health relevance," said Alan Dangour,
one of the report's authors.
"Our review indicates that there is currently no evidence to support the
selection of organically over conventionally produced foods on the basis
of nutritional superiority."]
What they didn't read or look at are the reports from true food experts
studying nutrient content values of the gross difference in organic food
nutrient content over the traditional farm grown food nutrient content.
To truly know the difference you must look at those findings, not
reports put out by the food industry on prepackaged, processed foods and
traditional farm bureaus! The results of research - commissioned by the
British government's Food Standards Agency - also published in the
American Journal of Clinical Nutrition. Being a political group that
works more for the large traditional farming world rather than the small
organic farmers, it looks very much like propaganda geared to help the
traditional chemical/pesticide/insecticide using farmers not the health
of the world!

Snoring, Apnea and Mental
Fog Connected?
Snoring may be associated with sleep apnea, which means you may stop
breathing for a few moments while you sleep. Most of the time that's not
serious, but it is unpleasant.
There are several effective treatments for snoring, but are there any negative
side effects when the buzz saw is silenced? The department of internal
medicine at the Kinki University School of Medicine in Osakasayama, Japan,
decided to find out.
As reported in the Tohoku Journal of Experimental Medicine, not only was
the risk of sleep apnea decreased, but so was general anxiety. Patients were
emotionally happier, and they became smarter, too! For reasons that no one can
quite pinpoint, their ability to do mathematic problems improved by about a
third.
So, if you have trouble preparing your income taxes or balancing your check
book, it may not knowingly be your fault. Just stop snoring and try again.

Eggplant of Many Colors and
Sizes
As I prepared Eggplant Parmesan with our fresh big purple eggplant I
knew what this weeks food had to be. I love eggplant parmesan and it is
relatively easy to make but the taste is unique and interesting.
What is eggplant?
Eggplant is a member of the nightshade family and is native to India.
The early varieties were bitter - and still are when bought in a grocery
store - but cultivation and crossbreeding have greatly improved the
flavor. Eggplant is related to potatoes, tomatoes, and peppers but
actually is considered a berry and not a vegetable. I don?t know who
decides these things as I prefer to think of it as a vegetable!
Thomas Jefferson experimented with many varieties of plants in his
Virginia garden and is credited with introducing eggplant to North
America. Eggplant has a long history so if you are interested in knowing

Eggplant isn't a particularly popular vegetable in the United States,
but it's a favorite in many areas of the South and Olive Garden
restaurant must have a large sales volume or they wouldn't continue to
offer it. Most Italian restaurants offer eggplant dishes as do Thai and
some other Asian restaurants.
 
Varieties;
Eggplant ranges in color from deep,
vibrant purple to pale, almost translucent white, and in length from 2
inches (about 5cm) to nearly a foot (about 30cm). Eggplants are
typically about 8 to 10 inches (about 20 to 25cm) long and 4 inches
(10cm) in diameter, with a glossy, dark purple skin. Other varieties
include the smaller, narrower Japanese or Asian eggplant, in purple or
striated shades, the Italian or baby eggplant, which looks like a
miniature version of the common variety, and white eggplants the size
and shape of eggs. I even bought my husband an eggplant plant called
Easter Egg Plant and the fruit looks exactly like a white hen's egg.
Taste is somewhat different than the giant purple and slim Japanese
varieties he grows in his garden and our favorites.
Baby; eggplant is a longer, thinner shaped vegetable than the
large variety. It has a shiny, purple-black skin with delicate and
tender flesh. When purchasing, select baby eggplant that are firm to the
touch with no wrinkles.
Japanese;
eggplants are most commonly purple, but can range in color from lavender
to pink, green, and white as well. They are thin skinned with a delicate
flavor and fewer of the bitter tasting seeds found in other eggplant
varieties. Look for an eggplant that is relatively light for its size,
firm, with dark-colored, smooth, shiny skin.
White; creamy white in color, this eggplant has a tough skin with
smooth flesh. It can be prepared in much the same way as the common
variety. White eggplant has a mild flavor with little trace of
bitterness. For freshness, choose a solid vegetable with glossy skin.

Buying and storing tips
Eggplant is available all year long in your local grocer's produce
section but is at its growing peak from August through September here
in the U.S.. Look for firm, heavy eggplants with smooth skin, avoiding
those with soft spots or browning. Store them in a cool, dry place and
use within a day or two of purchasing, or wrap in plastic and store in
the refrigerator for up to four days.
If the eggplant is young, the skin is edible. As the eggplant ages,
which is usually the case when purchased in the grocery store, the skin
becomes bitter and may require peeling. The flesh discolors rapidly, so
cut eggplant just before cooking. Slice eggplant, salt it, and let it
?weep? for 20 minutes to remove any bitter flavor. I don?t always let
them weep and I have found no difference in the taste or texture, so do
either?
Nutritional value;
Since berries - they claim eggplant to be - are sweet I do not know how
they can consider it a berry as it is not sweet or really suited to be
eaten raw. Properly cooked it is a great addition to many dishes and
naturally high in fiber and low in calories making it a great, healthy
alternative to many things. The natural meaty texture makes eggplant a
good alternative to meats and allows you to make hearty dishes that are
low in fat with only 20 calories per cup as well as a good source of
protein, a healthy good carbohydrate and a good source of Manganese.
Cooking Tips;
Grilling or baking makes for the best form of cooking.
Grilling eggplant is tasty and healthy. Eggplant is great at absorbing
flavors it is mixed with different spices and foods. To begin with
eggplant will start turning brown the second it is cut. While this won't
affect the flavor it does change the appearance so wait until the last
second to cut it. For grilling it is best to cut small eggplants
lengthwise into halves or quarters depending on the size. Larger
eggplants should be cut crosswise to a thickness of about 3/4 inch. Now,
lightly brush with oil and season to your liking. Eggplant can absorb a
lot for liquid so go easy on the oil or you'll end up with an oily
sponge. Don't be afraid to add strong flavors to eggplant, especially if
you are going to be adding it to another dish. Grill eggplant pieces for
about 8 to 10 minutes turning occasionally. Eggplant usually holds
together well on the grill so don't be too worried about it falling
apart. The heat should be medium high and remove the eggplant when it is
well browned and tender.
Our very favorite is Eggplant Parmigiana and here is my personal
recipe for two. You can double or triple it if you wish;
1 med. eggplant (about 1 lb.), cut crosswise into 8 rounds, each about
3/4
inch thick
1 tbsp. plus 1 tsp. olive oil, divided
1 cup seasoned bread crumbs
Salt and pepper
2 tbsp. diced onion
1 garlic clove, mashed
1 cup of your favorite marinara sauce
Dash of oregano leaves
4 oz. (1/4 cup) Mozzarella cheese, shredded
2 TBS. fresh or 2 teasp. canned grated Parmesan cheese
Brush both sides of each eggplant slice with 1/4 teaspoon virgin olive oil, sprinkle with
sea salt and pepper then roll in seasoned bread crumbs until coated. (I make my own
seasoned bread crumbs so your taste may be different than ours) Transfer
slices to non-stick baking sheet or small cookie sheet sprayed with
olive oil. Bake at 400 degrees until browned,
about 10 minutes.
Turn slices and bake another 10 minutes
longer.
While eggplant is baking, in small skillet 2 tsp. virgin olive
oil, combine onion and garlic; cook until onion is tender.
In shallow 1 quart casserole, spread 3 to 4 tablespoons favorite seasoned
marinara sauce. Arrange baked eggplant in
casserole, overlapping slices or not (it's your choice), and pour sauce over
eggplant; top with onion mixture, then cheeses.
Reduce oven temperature to 350 degrees and bake Eggplant Parmigiana
until cheese is melted and browned, 25 to 30 minutes. 2 servings.

Sadly food alone
cannot yield all the necessary healthy nutrients - especially balance of
minerals - as they did in centuries past, so we can't rely
totally on our food intake! Because of the lack of nutrients in our
soils and the pollutants added in the form of air pollution, pesticides,
herbicides and fertilizers important nutrients are almost nonexistent
and we know the body is not capable of producing minerals with even the
healthiest of diets, as it can vitamins, and must be obtained from our
foods or daily supplemented...

"Pickled and Ready For Burial" could be your epitaph if you
habitually ingest foods containing the artificial sweeteners
Equal, NutraSweet, Equal Measure,
Spoonfull, Splenda or Canderal.
Sucralose or, as it is better known, Aspartame/Splenda known as
sugar substitutes consumed in any form is dangerous to your
mental and physical health!
Those sweeteners contain a full 10% methanol. Methanol is what
wood alcohol contains and I have seen alcoholics ie from
drinking wood alcohol. Sadly consuming these products will be a
much slower and more miserable death. ethanol is absorbed faster
when heated to 86 degrees or greater before being ingested. That
is barely warm!
Methanol readily breaks down into formaldehyde and formic acid
in the body.
Formaldehyde is what the undertaker will use to embalm you after
death, so don't do their job before it is needed!
Formaldehyde is accumulative in the body, therefore if you
routinely ingest foods and/or drinks with those artificial
sweeteners you are doing the undertaker's job and pickling your
brain. Formaldehyde is a neurotoxin brain poison) that will
drown your brain when the accumulative process builds up,
creating all types of brain diseases!
Formaldehyde is a known carcinogen and known to cause retinal
damage to the eye. It also interferes in DNA replication causing
birth defects in infants. Because humans are lacking in certain
enzymes due to the lack of minerals and nutrients in our foods
we can quickly absorb the formaldehyde and formic acid into our
body?
Formic Acid is used to remove epoxy and urethane coatings, which
is definitely not a health food! It too is a cumulative toxin.
It also inhibits oxygen metabolism. Oxygen metabolism is
extremely necessary for a healthy brain to make correct
decisions and for your heart to keep beating? Imagine what is
happening to your tissues and veins as it collects in them as
well. Peeling away healthy tissue and depositing toxic poisons!
Aspartame's other 90% is phenylalanine and aspartic acid, and
when taken into the body without food, is totally neurotoxic...
Diet drinks are more often taken into the body devoid of foods
thereby making the body toxic and increases damage to the total
body?
Aspartame only came on the market after a new FDA Commissioner
overruled the objections of the scientists and FDA board of
inquiry that found the stuff poison to human and animal, but
approved it anyway.
How?
It had been beaten back for more than eight years by the
objections of the scientific community and the thousands of
documents showing the dangers and poisonous makeup of aspartame.
The head of Searle went to our then president (1981) and heads
changed at the FDA. A new FDA commissioner was installed giving
the green light for aspartame to be sold. That commissioner then
quit the FDA, once his ruling took effect and he went to work at
Searle for an exorbitant salary. You don't have to go to the
movies to see such things occurring simply read U.S. governments
history?
The people who are consuming the diet sweeteners are at the
highest risk of toxic poisoning. They are usually dieting and
devoid of nutrients making the poisons more absorbent and
setting that person up for the undertaker a few years down the
road and a very ill end of life.
Could the epidemic increases of Alzheimer's, brain cancer,
newborn defects and seizures in the last twenty years be due to
the popular use of aspartame in all kinds of foods?
Signs of aspartame overload/poisoning comes in the form of
headaches, mental confusion, seizures, faulty balance and
fainting. If you are having blackouts or mental fuzziness and
drink diet sodas or eat processed diet foods you are a heart
attack waiting to happen or a long very ill end of life.
Don't buy something that says sugar-free without checking out
the label to see what it is sweetened with! Sweeta isn't an
alternative either!!!

Kids' lower IQ scores
linked to prenatal pollution

CHICAGO (AP) - Researchers for the first time have linked air
pollution exposure before birth with lower IQ scores in
childhood, bolstering evidence that smog may harm the developing
brain.
The results are in a study of 249 children of New York City
women who wore backpack air monitors for 48 hours during the
last few months of pregnancy. They lived in mostly low-income
neighborhoods in northern Manhattan and the South Bronx. They
had varying levels of exposure to typical kinds of urban air
pollution, mostly from car, bus and truck exhaust.
At age 5, before starting school, the children were given IQ
tests. Those exposed to the most pollution before birth scored
on average four to five points lower than children with less
exposure.
That's a big enough difference that it could affect children's
performance in school, said Frederica Perera, the study's lead
author and director of the Columbia Center for Children's
Environmental Health.
Dr. Michael Msall, a University of Chicago pediatrician not
involved in the research, said the study doesn't mean that
children living in congested cities "aren't going to learn to
read and write and spell."
But it does suggest that you don't have to live right next door
to a belching factory to face pollution health risks, and that
there may be more dangers from typical urban air pollution than
previously thought, he said.
"We are learning more and more about low-dose exposure and how
things we take for granted may not be a free ride," he said.
While future research is needed to confirm the new results, the
findings suggest exposure to air pollution before birth could
have the same harmful effects on the developing brain as
exposure to lead, said Patrick Breysse, an environmental health
specialist at Johns Hopkins' school of public health.
And along with other environmental harms and disadvantages
low-income children are exposed to, it could help explain why
they often do worse academically than children from wealthier
families, Breysse said.
"It's a profound observation," he said. "This paper is going to
open a lot of eyes."
The study in the August edition of Pediatrics was released
Monday.
In earlier research, involving some of the same children and
others, Perera linked prenatal exposure to air pollution with
genetic abnormalities at birth that could increase risks for
cancer; smaller newborn head size and reduced birth weight. Her
research team also has linked it with developmental delays at
age 3 and with children's asthma.
The researchers studied pollutants that can cross the placenta
and are known scientifically as polycyclic aromatic
hydrocarbons. Main sources include vehicle exhaust and factory
emissions. Tobacco smoke is another source, but mothers in the
study were nonsmokers.
A total of 140 study children, 56 percent, were in the high
exposure group. That means their mothers likely lived close to
heavily congested streets, bus depots and other typical sources
of city air pollution; the researchers are still examining data
to confirm that, Perera said. The mothers were black or
Dominican-American; the results likely apply to other groups,
researchers said.
The researchers took into account other factors that could
influence IQ, including secondhand smoke exposure, the home
learning environment and air pollution exposure after birth, and
still found a strong influence from prenatal exposure, Perera
said.
Dr. Robert Geller, an Emory University pediatrician and
toxicologist, said the study can't completely rule out that
pollution exposure during early childhood might have
contributed. He also noted fewer mothers in the high exposure
group had graduated from high school. While that might also have
contributed to the high-dose children's lower IQ scores, the
study still provides compelling evidence implicating prenatal
pollution exposure that should prompt additional studies, Geller
said.
The researchers said they plan to continuing monitoring and
testing the children to learn whether school performance is
affected and if there are any additional long-term effects.
