Greetings and thank you for
being an optin subscriber!
I'm thinking WOW, it's more than half way through the year and I'm still
stuck back at the beginning, mentally. As our Monsoon season is trying
to raise it's head and bring daily moisture, which we need desperately,
I know that I will have long periods of time when the storms will shut
down my computer so the next couple of months you may find this ezine
being published at odd times...
This week's "Food of the Week" was brought about by my husband bringing
in a fresh bunch from his garden and when I bit into the tasty, sweet
veggie I knew this weeks food was one we love with loads of nutrients

NEW YORK - Many people seem to have a vague notion that bottled water is
healthier than tap, but it is not a major reason that they buy it, a
small study finds.
UK researchers found that among the 23 gym-goers they interviewed, many
thought that bottled water was more "pure" and healthful than tap water.
But they were hard-pressed to come up with any specific health benefits.
And when it came to their motivations for buying bottled water, health
reasons were not at the top of the list. Instead, taste, convenience and
cost were more important in study participants' decisions to buy or not
to buy, the researchers report in the online journal BMC Public Health.
Consumer demand for bottled water has been steadily rising over the past
decade, and health concerns are often assumed to be a driving force,
according to Lorna A. Ward and colleagues at the University of
Birmingham.
However, their findings suggest that is not the case, the researchers
say.
And research suggests that consumers may be right to retain some
skepticism about the health advantages of bottled water. About 25
percent of bottled water comes from municipal water supplies, making it
essentially repackaged tap water. Studies have also found that, like tap
water, bottled varieties sometimes contain chemical and bacterial
contaminants.
In the current study, participants typically viewed bottled water as
more "pure" than tap, but mostly could not name specific health
advantages. When they did, they most often cited bottled water's higher
mineral content versus tap water -- which, Ward's team notes, is true of
some brands of mineral water, but not all.

heart attack risk. A recent study proves you should be on a

The
Golden Health Stick!
My husband pulled a batch of carrots from his organic garden this week
and as I bit into the sweet crunchy veggie I knew what this weeks food
would be!
Easy to pack and perfect with that favorite dip, the crunchy texture and
sweet taste of carrots is popular among both adults and children. Golden
stick called a carrot is shipped around the country from California
throughout the year.
The carrot has a thick, fleshy, deeply colored root, which grows
underground, and feathery green leaves that emerge above ground. It is
known scientifically as Daucus carota, a name that can be traced back to
ancient Roman writings of the 3rd century. Carrots belong to the
Umbelliferae family along with parsnips, fennel caraway, cumin and dill
which all have the umbrella-like flower clusters that characterize this
family of plants.

The carrot is an herbaceous plant containing about 87% water. The power
and goodness of carrots have many important vitamins and minerals, when
grown organically. They are rich in antioxidants Beta Carotene, Alpha
Carotene, Phytochemicals and Glutathione, Calcium and Potassium, and
vitamins A, B1, B2, C, and E, which are also considered antioxidants,
protecting as well as nourishing the skin. They contain a form of
calcium easily absorbed by the body. Finally they also contain Copper,
Iron, Magnesium, Manganese, Phosphorous and Sulphur, a real wonder
drug!!
More nutrients, in small amounts, essential oils, carbohydrates and
nitrogenous composites. They are well-known for their sweetening,
antianemic, healing, diuretic, remineralizing and sedative properties.
In order to assimilate the greatest quantity of the nutrients present in
carrots, it is important to chew them well to garner those nutrients.
Carrots are nutritional heroes; they store a goldmine of nutrients. No
other vegetable or fruit contains as much carotene as carrots, which the
body converts to vitamin A - great for the skin and tissues... This is a
truly versatile vegetable and contains an extraordinary pectin fiber
that has been found to have cholesterol-lowering properties.
Clearly a raw carrot has more goodness in it when it is raw and
therefore you would assume it is the healthiest way to eat it. Not true!
Most healthy is juiced then consumed, the body cannot break down all
that great goodness as well because of the cellular nature of the
carrot. So in reality, unlike most other vegetables (not all),
carrots are more nutritious when eaten slightly cooked than eaten raw (except
when juiced raw). Because raw carrots have tough cellular walls, the
body is able to convert less than 25 per cent of their beta carotene
into vitamin A. Cooking, however, partially dissolves
cellulose-thickened cell walls, freeing up nutrients by breaking down
the cell membranes. So long as the cooked carrots are served as part of
a meal that provides some healthy plant fat the body can absorb more
than half of the carotene. Carrots are usually cut into pieces and eaten
after boiling or steaming, but done in this way, half the proteins and
soluble carbohydrates will be lost, so it is more advisable to cook them
whole and then cut up.
Experiments show that eating lightly-cooked carrots is much more
beneficial than eating raw carrots, which confirms the ancient wisdom in
traditional Chinese medicine. Traditional Chinese medicine practitioners
have always recommended that their patients eat lightly-cooked carrots
in order to get the best nutritional absorption. Research by Dr.
Xiangdong Wang at Tufts University found that beta carotene can change
in the human body into a substance called retinoic acid, which is widely
used to treat and prevent cancers.
Often overlooked, but found in carrots, is alpha carotene. According to
an article in NCI Cancer Weekly (Nov. 13, 1989), Michiaki
Murakoshi, who leads a team of biochemists at Japan's Kyoto
Prefectural University of Medicine, contends that alpha carotene may
be more powerful than beta carotene in inhibiting processes that may
lead to tumor growth. Murakoshi indicates that neuroblastoma (cancer)
cells coated with carotenoids experience a drop in N-myc activity
compared to untreated cells. N-myc is a gene that codes for cell
growth-stimulating proteins and can contribute to cancer formation and
growth. Alpha carotene was found to be about ten times more inhibitory
toward N-myc activity than beta carotene. Murakoshi concludes that all
types of carotenoids should be studied for possible health benefits.
Carrots benefit our bodies by:
* Boosting immunity (especially among older people).
* Reducing photosensitivity (beta-carotene protects the skin from sun
damage).
* Improving symptoms of HIV.
* Easing alcohol withdrawal symptoms.
* Helping to heal minor wounds and injuries.
* Reducing the risk of heart disease.
* Reducing the risk of high blood pressure.
* Cleansing the liver, and when consumed regularly, can help the liver
excrete fats and bile.
* Fighting bronchitis.
* Fighting infection (vitamin A keeps cell membranes healthy, making
them stronger against disease-causing microorganisms)
* Improving muscle, flesh, and skin health.
* Helping fight anemia.
* Reducing acne.
* Improving eye health.
Have you ever seen a purple, white, yellow, or red carrot?
Most
people haven't, even though such carrots have existed for hundreds of
years. You may see them in the future. Research at the University of
Wisconsin-Madison suggests that pigments in these colorful carrots,
which taste just like regular carrots, may help prevent heart disease
and cancer, and reduce cholesterol. Studies examining the health
benefits of fruits and vegetables are revealing the disease-preventive
powers of the pigments that give plants their distinctive colors. I
found some of these at the Farmer's Market and they indeed do taste like
carrots even though they don't look like them.
According to the World Health Organization, vitamin A deficiency
partially or totally blinds nearly 350,000 children from more than 75
countries every year. Roughly 60 percent of these children die within
months of going blind. However, vitamin A deficiency is preventable.

Well-known and heavily prescribed sleeping pills Ambien and
Lunesta are demonstrating increasingly common (and extremely
odd) side effects.
Even though the [FDA] review was prompted, in part, by queries
to the agency from The New York Times, after some users of the
most widely prescribed drug, Ambien, started complaining online
and to their doctors about unusual reactions ranging from fairly
benign sleepwalking episodes to hallucinations, violent
outbursts, nocturnal binge eating and - most troubling of all -
driving while asleep.
Night eaters said they woke up to find Tostitos and Snickers
wrappers in their beds, missing food, kitchen counters
overflowing with flour from baking sprees, and even lighted
stoves.
Sleep-drivers reported frightening episodes in which they
recalled going to bed, but woke up to find they had been
arrested roadside in their underwear or nightclothes. The agency
said that it was not aware of any deaths caused by
sleep-driving.
Yet the drugs remain on the market, then just this week the
following report came to light.
Study in mice sheds light on Ambien side effects

CHICAGO (Reuters) - A new study in mice may help explain some of
the rare but strange side effects in people taking the sleep
drug Ambien, including sleep walking, midnight binges and even
driving while not fully awake.
Ambien, made by Sanofi-Aventis, can shut down powerful brain
circuits responsible for inhibiting brain activity under certain
circumstances, leaving other brain circuits unchecked,
researchers at Georgetown University Medical Center in
Washington said.
"You are kind of releasing the brakes," said Molly Huntsman of
Georgetown, who worked on the study that appears in the
Proceedings of the National Academy of Sciences.
This may stimulate brain circuits that would normally be
silenced. "In a way, Ambien is awakening other circuits because
the brakes are not in place," Huntsman said.
To study the effects of the drug, known generically as zolpidem,
Huntsman and colleagues conducted a series of experiments in
mice.
The team wanted to see how mice on the drug would respond when
the researchers trimmed their whiskers, which rodents use as
their primary sensory system -- much like humans rely on vision
to take in information about the world.
The team found that mice that were deprived of this sensory
information had changes in their brain that affected the way
they responded to the drug Ambien.
"It's a population of neurons that is normally in place to stop
activity. We find what Ambien does is inhibit their function to
inhibit," Huntsman said in a telephone interview.
She said normally the drug has no effect on this group of
neurons, but trimming the whiskers was enough to change brain
receptors, making the mice respond differently to the drug.
"What's happening in the mouse brain is we are seeing the
inhibitory neurons that are becoming sensitive to Ambien, where
they normally wouldn't be," she said.
Huntsman said humans and mice share many of the same brain
circuits and she thinks it is possible the same thing is going
on in some people, whose brains are somehow predisposed to react
differently to the drug.
"The thing about humans is that it doesn't happen in every case.
But in a few cases, people will start to sleep walk and sleep
eat and have these crazy bizarre situations," she said.
Huntsman said it may be that something has happened to change
the brain receptors that affect the way these people respond to
the drug.
"A lot of things can change your brain chemistry -- stress,
alcohol use," she said.
Huntsman cautioned that more study was needed to understand
these effects but said the findings offer new clues for future
research.

Greenfreeze Could Spell the Deep Freeze for Global Warming
Refrigerators

Hydrocarbon (HC) refrigerants are a "natural" cooler widely used
in domestic and commercial refrigerators all over the world,
except in the U.S. and Canada. HC refrigerants produce less
greenhouse gasses than hydrofluorocarbon (HFC) technology, but
they aren't approved for the U.S. market - yet.
Now Greenfreeze, the Greenpeace-developed HC refrigerant, is
poised to enter the U.S. thanks to a boost from an unlikely pair
of companies, Ben & Jerry's and General Electric. It's not a
moment too soon: a new study has fingered HFC refrigerants and
other so-called F-gasses as a rapidly growing source of
emissions responsible for global warming.
Oh, SNAP - What's Holding Up Greenfreeze?
SNAP is the U.S. EPA's Significant New Alternatives Policy
Program, which regulates substitutes for CFC's
(chlorofluorocarbons) and other ozone-depleting substances that
were phased out under the Clean Air Act. So far, Greenfreeze and
other HC-based refrigerants have not made the grade. A big part
of the problem is the high risk of flammability in two HC
substitutes, isobutane (think cigarette lighters) and propane
(think barbecue grills).
Ben & Jerry Give Greenfreeze a Try
Last fall, green-hearted Ben & Jerry successfully petitioned the
EPA to allow a test run of Greenfreeze regrigerators at stores
in Washington, DC and Boston. There are also several in Vermont
(you can find them through the Greenfreeze locator).
General Electric Gets into the HC Act
Around the same time, General Electric announced that it had
applied to the U.S. EPA for approval of isobutane as the
refrigerant for its new Monogram brand refrigerators. GE expects
to roll Monogram out in the U.S. in 2010, so let's hope that its
optimism is rewarded with a thumbs-up from the EPA. Given the
"Kafkaesque" SNAP process, that could take a while.
Why Shift from HFC's to HC's?
When CFC's were being phased out, HFC's were the
first-generation answer to the problem of ozone depletion.
However, Greenpeace points out that HFC's are a substantial and
growing problem in terms of greenhouse gas emissions, as
described by a new study of HFC's published in the Proceedings
of the National Academy of Sciences. The rapid adoption of HFC
refrigerators in Asian markets is partly responsible for the
uptick; so is the reluctance of the U.S. and Canada to shift
away from HFC technology.
The Final Nail in the Coffin for HFC's
GE is just one global company putting its toe in the HC waters.
Refrigerants Naturally is a corporate initiative to reduce the
use of HFC's and other "F-gasses," supported by such luminaries
as IKEA, Pepsico, McDonald's, Unilever, Carlsberg, and Coca-Cola
as well as Greenpeace and the United Nations Environmental
Programme. With Pepsico and Coca-Cola on the same page, it seems
like the final curtain is ready to close on HFC's.
